Some of the pictures were taken later, but like many plans during the pandemic, the project was put on hold and almost forgotten. Recently, I rediscovered the photos and the story behind them, and I felt it was the perfect time to share it with you. Wandering through the Galilee, you’ll find the scent of fresh-baked Druze pita rising from a saj, hear the echo of prayers from mosques and synagogues, and see artisans crafting intricate designs passed down for generations. Each community contributes its own traditions, from festive dishes and handmade crafts to the seasonal rituals that mark the passage of time.
One of the most unique communities in the Galilee is the Circassian people, a small but vibrant culture with just two villages in the region. Though small in number, their heritage is deeply rooted and proudly preserved. Their distinctive cheese-making tradition, passed down for centuries, is a hidden gem of Galilean cuisine. Visitors to their villages can taste this carefully crafted cheese while exploring their unique language, architecture, and rich cultural heritage.

Your Culinary Journey Through the Villages and Towns of the Galilee
As you travel through the Galilee, you quickly realize that each culture has its own flavors, its own traditions, and its own unique way of life. Instead of a single bustling market where everything blends together, the real experience unfolds as you explore the villages and towns, each offering its own culinary treasures.
In a Druze village, you might stop at a small bakery where thin, freshly baked saj pita is served with homemade labneh and za’atar. Further down the road, in an Arab town, the scent of slow-cooked lamb and fragrant spices fills the air outside a family-run restaurant.
Driving north, you arrive at one of the two Circassian villages, where a shop owner offers you a taste of their signature cheese—a delicacy crafted for generations. Each stop is more than just a meal; it’s a window into a culture, a tradition, and a way of life that has been carefully preserved over time.

Unlike in big cities where cultures merge in shared markets, here in the Galilee, every meal is a journey—a moment to connect with a different story, a different flavor, and a deeper understanding of the region. In the Galilee, there are also mixed cities such as Haifa and Acre, where diverse cultures live side by side. These cities are home to shared markets where people from different backgrounds come together, creating a unique and vibrant atmosphere.
What Connects Everyone During Olive Harvest Season?
One of the most cherished traditions in Galilee is the olive harvest, which serves as a bridge between galilee people and communities. Many families in the region, including mine, tend to small olive groves for personal use. During this season, conversations often begin with, "How was your harvest this year?" as neighbors share their experiences and stories. The local olive press becomes a gathering place where families wait for their freshly pressed oil. It’s common to see families with children, passing down the tradition and sharing in the excitement. This annual ritual is a powerful reminder of the deep-rooted connections and shared heritage that make Galilee today so special.

Another tradition that binds the Galilee people is the pomegranate harvest. The pomegranate tree is the second most common in the region, and during the season, you’ll find fresh pomegranate juice or whole pomegranates in every produce store. People rush to buy them before the season ends. At Galilee Dreams, we give new life to pomegranates that have fallen and been overlooked. Abbey Rotbart, our talented textile artist uses an eco-dye method to create our scented sachets, transforming the deep red liquid from the pomegranate peels into a golden hue that colors the fabric. This process, where something simple turns into gold, symbolizes how I feel about Galilee—a place where tradition and nature come together to create something truly unique and beautiful.
